Tracey's recipe swap

Hi there,
Tracey at Clover offered an invitation to participate in a recipe swap. That is perfect timing for Mother's Day weekend! Since this was also Cinco de Mayo week, I have requested a Tex-Mex meal on Sunday. We'll be making Steak Fajitas, along with some yummy sides. Below I'm sharing what we think is the perfect guacamole recipe. It is delicious every time, but somehow it is most delicious when my daughter prepares it.

Creamy Guacamole
4 ripe avocados
1/4 cup chopped sweet onion
1/4 cup chopped fresh cilantro
1 small garlic glove, minced
3 tablespoons fresh lemon juice
2 tablespoons half-and-half
3/4 teaspoon salt

CUT avocados in half. Scoop pulp into a bowl; mash with a potato masher or fork just until chunky. Stir in remaining ingredients.

My amazing daughter is also bringing a side dish, Zesty Lime Shrimp and Avocado Salad, that she found on Pinterest. I can't wait to taste it! My amazing son will be bringing his appetite!  Ha!

I'm thinking hard about the perfect dessert to accompany all of this. One possibility high on the list is:

Chocolate Brownies with Mocha Icing
4 large eggs
2 cups sugar
1/2 cup plus 3 tablespoons unsalted butter, softened
1 1/3 cups sifted flour
1/2 cup unsweetened cocoa
1/8 teaspoon salt
2 teaspoons vanilla
1 cup coarsely chopped pecans
Mocha Icing (below)

PREHEAT the oven to 350 degrees. In a large bowl, beat the eggs, adding the sugar a little at a time. Beat the mixture until it is thick and pale. Add the butter and beat until smooth. Sift the flour, cocoa, and salt, blending the batter well. Stir in the vanilla and pecans.

Pour the batter into a buttered and floured 9 x 13 baking pan. Bake in the middle of the oven for 25-30 minutes, or until it pulls away slightly from the sides of the pan and a wooden toothpick inserted in the center comes out clean. Cool. Spread with Mocha Icing. Chill for at least 30 minutes or until icing is set. Cut in squares before serving.

Mocha Icing
2 1/4 cups sifted powdered sugar
2 tablespoons unsweetened cocoa
2 tablespoons unsalted butter, softened
2 teaspoons vanilla
6-8 tablespoons hot strong coffee

Cream together the sugar, cocoa, butter, and vanilla. Add the coffee, 1 tablespoon at a time, beating until the mixture is spreading consistency.

I finished the second wee baby socks.  I am just tickled with this pair, I may save them for Christmas ornaments!
